Kamado grills

Kamados are thick ceramic grills that hold heat for hours on a small amount of lumpwood. They sear, roast and cook low and slow, but they are heavy and need a stable stand.

Kamados are sized by grill diameter. A 46 cm grate is the popular all-rounder; smaller ones are easier to move and larger ones take a whole joint with room to spare.

Air enters through the bottom vent, passes through the lumpwood in the firebox and leaves through the top vent. Open more for hotter, less for cooler. A heat deflector stone turns direct grilling into indirect roasting.

Check the weight against your patio and the stand or cart that comes with it, and keep the dome closed as much as possible: lifting it lets heat out and air in.
